Harvested in the tea gardens of Jingdong Yi County in Yunnan, China, this enticing ripe, or shou pu-erh has gone through a stimulated fermentation process before being pressed into its cake form. Dark, full-bodied and earthy, it has a sweet, lingering finish that makes it a pleasure to drink today. While you may rest assured that it will slightly mellow over time, you need not age this pu-erh until the next Year of the Pig to realize the greatest enjoyment.

Ingredients

Full leaf fermented tea from Yunnan, China 

Blend Numerology

No. 78 – Number of hours this tea ferments before being pressed into its cake form. 

Preparation

Bring spring or filtered water to approximately 212°F. Dislodge a 7g piece of pu-erh (approximately the size of a silver dollar). Steep in traditional gaiwan method—making multiple infusions, starting at 10-15 seconds and increase 5-10 seconds with each steeping.  

Storage: Unlike most tea, pu-erh improves with age and may be enjoyed for years. For best enjoyment, store in a cool, dry place that is temperature controlled. Store away from other fragrant ingredients such as coffee to avoid contamination.
