Better on second infusion

This is one of the best teas I've sampled from Steven Smith. I'm not sure I would agree with the tasting notes, but regardless it is a fantastic batch. I find the flavor mellows out in a pleasant way after the first infusion.

Preparation

Place 7 grams of tea leaves into 175 ml (6 ounce) gaiwan. Bring spring or freshy drawn filtered water to 185 degrees. Fill your gaiwan to the top and let the leaves steep for 10-20 seconds. Set the strainer on top of the decanter and pour the tea out of the gaiwan with the lid slightly askew, without allowing the tea leaves to escape. Serve into small cups and repeat this process at least 4-5 times and notice how the tea leaves change in flavor over each infusion.

Alternatively, this tea can be brewed for single infusions using 3 grams of tea per 8 ounces of water and steeped for three minutes.

Full Leaf Green Tea

Plucked at an altitude of 800-900 meters before raining season at the Hai Yi Lin garden, Forever Fragrance is a clear expression of teamaker’s embracing tradition while pushing boundaries. This tea is made from a celebrated cultivar called Fuding – one of the major cultivars used in white tea production – however the teamaker’s processed the leaves using green tea techniques. The result is something exceptional, with notes of roasted corn, buttermilk and rock sugar.

Guizhou Province, China

A mountainous province in southwest China, Guizhou is home to Asia’s longest cave (Shuanghe), which stretches more than 148 miles long, and the world’s largest single-dish radio telescope with a diameter the size of 30 football fields. In addition to being one of China’s important green tea producing regions, it is also home to Moutai, considered to be China’s national liquor, a colorless baijiu distilled from fermented sorghum.
